calories pound of fat means that you would have to burn/exercise off a certain amount of energy (calories) to get rid of one pound of fat.  A very good estimate is that there are 3,500 calories in one pound of fat.  Some say, there are 4,086 calories in one pound of fat (see calculation below).

The reason for the lower number (3,500) is that things such as water content, waste material, absorption rate are taken into consideration.  That is, because the fat contains water, or is the kind of fat that cannot be absorbed, or the fat can be taken out of the body much faster because of high fiber in the diet, the calories per pound of fat can be decreased.

A pound equals 454 grams.  A gram of fat has 9 calories.  9 x 454 = 4,086.
